Healthy (Really!) Mint Chocolate Chip Ice Cream

I’ve been a vegetarian for nearly a decade, but dairy creeps in and out of my diet. I mean, who doesn’t love a great cheese plate with a glass of wine? Recently, I’ve been back in no-dairy mode because it wrecks havoc on my skin and has been linked to a number of other pretty uncomfortable side effects.

If that isn’t enough to convince you to switch to a healthy, homemade dairy-free ice cream, let’s talk about the obvious: most ice cream is loaded with sugar, fat, and a whole bunch of empty calories.

This healthy ice cream is vegan, low in calories and fat, and still tastes indulgent enough to have as your dessert. You can always make a super simple healthy ice cream by blending frozen bananas and a little plant-based milk, but I think this is more fun. Plus, it has the added benefits of some great ingredients that provide antioxidants, adaptogens for energy, enzymes, probiotics, and fiber.

Vegan Mint Chocolate Chip Ice Cream Recipe - just 5 ingredients!

Healthy Mint Chocolate Chip Vegan Ice Cream

Ingredients

  • – 2 Frozen bananas (Peel and slice them ahead of time)
  • – 1/8 cup unsweetened non-dairy milk (I like almond or cashew!)
  • – 2 Tbs HUM Nutrition Raw Beauty Green Superfood Powder, Mint Chocolate Chip flavor (Get it at Sephora or Amazon)
  • – 1/2 avocado
  • – Raw cacao nibs – as much or as little as you want for your “chocolate chips”
  • – Fresh mint, to taste

I like simple recipes. I’m not patient enough for a 30 step process, you know? So this is super simple: throw all that stuff in a blender. If you want your ice cream to be more like soft serve, add the full 1/8 cup of milk. If you’d like a more solid consistency, just add enough to blend smoothly. ┬áThe whole process takes less than five minutes, and you’ll have a tasty dessert that won’t leave you with any of those nasty side effects.

    oh my goodness, is it weird that I think this sounds so much better than regular ice cream? Mint chocolate chip is my JAM & i need that HUM powder asap! Such a creative idea & I love the addition of avocado for the green colour! xx S
